As you can see the difference is simply shape and size! A Batard is a large oval shape that will give you more even sized slices for toast or sandwiches. The boule is a smaller ball shape, ideal for a smaller crowd or to hollow and fill with brie or dip!

Regular yeasted bread contains around 124,000 ppm of gluten. Sourdough is not gluten free but about 97% less gluten at approximately 200 ppm. To be considered gluten free it would have to register at less than 20ppm of gluten. People with celiac disease are recommended to avoid anything with wheat flour but someone that has gluten intolerance may do well with consuming sourdough breads.
